Baigan Bharta (Brinjal)

1 Large Brinjal ( apply some oil on the complete exterior of the brinjal and put it directly on the gas on slow fire and let it be soft and burnt from all sides)

1 Medium Onion chopped finely

1 Medium Tomato chopped finely

3 Green chillies slit from the centre into 2 halves

Curry leaves – 10 leaves

Coriander leaves – 2 tbsp washed and chopped finely

Cumin Seeds – 1/2 tsp

Coriander Powder – 1 tsp

Red Chilly Powder – 1/4 tsp

Turmeric Powder – 1/4 tsp

Vegetable Oil – 3 tbsp

Salt to taste



1. Burn the brinjal and remove the skin. Mash the brinjal and keep aside

2. In a nonstick kadai heat oil add cumin seeds and let them sizzle. Add onions and let it cook for 5 minutes

3. Add tomatoes and salt and stir it till the onions and tomatoes both are soft. Add chillies and curry leaves

4. Add coriander powder, turmeric and chilly powder and stir. Let the mixture cook on slow fire for about 5 minutes

5. Add the brinjal and stir well. Let it cook for atleast 10 minutes by stirring it occasionally

6. Garnish with coriander leaves once done



Brinjal has never been liked by many people due to the colour and taste it usually has. However I suggest try the bharta and am sure you would love it
