Veggie Tortilla Wrap

Ingredients

For Chutney

Grind the following to fine paste:

Cup chopped Coriander Leaves

1 tbsp. lemon juice

2 green chilli (Adjust as per your requirement)

1 tsp Oil

1 Tbsp fresh cream

Filling for Wrap

1 Cup Vegetable cut length wise as per your choice

1 Onion cut length wise

1 Tomato cut length wise

¼ tsp jeera

¼ tsp turmeric powder

¼ tsp coriander powder

¼ tsp chilli powder

½ tsp spice mix/garam masala

Salt as per taste

For Wrap

6 piece of corn tortilla wraps

Method:

  • Heat 1 tsp oil in a wok, add jeera and roast for few seconds
  • Add onion and fry until light brown
  • Add all the spices & salt followed by the vegetables & tomato, mix well, cover & cook
  • Do not overcook & ensure the vegetables are dry – should not be soggy
  • Once done, switch off gas and leave it to cool off
  • Heat up the tortillas as per instruction on the packet
  • Apply the 1 tbsp chutney evenly on the tortilla
  • Place a generous scoop of the vegetable mixture
  • Wrap it and cut as per your desired shape (Usually I cut diagonally in half)
  • Serve immediately

Tips:

  • Only half cook the vegetables, it should be crunchy
  • Vegetables used in this recipe : Cabbage, Capsicum, carrot & French beans
  • Add shredded cheese along with vegetables when you wrap, it will enhance taste & kids will sure love it
