Pineapple Fried Rice


A Thai traditional dish, my family favorite


2 Cups Long Grain Rice

1 Onion diced

1 cup fresh Pineapple (Cut in cubes)

1/4 Cup Green Peas

1/4 cup Capsicum (Cut in cubes)

2 tbsp Cashew Nuts

2 tbsp oil

1/4 tsp turmeric powder

1/2 to 1 tsp curry powder (Adjust as per taste)

1/2 tsp chilli flakes (Optional)

Salt as per taste


  • Cook rice and leave it to cool down completely, ensure the rice does not stick to each other
  • Heat oil in a wok
  • Fry the cashew nuts until golden color, remove to a kitchen towel to drain excess oil
  • In the same oil stir fry the vegetables and cook. Do not over cook, leave it crunchy
  • Add the turmeric powder,crushed chilli flakes and curry powder, saute for couple of seconds
  • Add rice and salt as per taste, stir fry on medium heat until well combined
  • Switch off gas and garnish with fried cashew nuts
  • Serve hot with Thai Green curry or can be served as a single meal dish as well


  • While cooking rice add a tbsp of oil so that the rice don’t stick to each other
  • Refrigerated overnight rice can also be used for this dish
  • You can add any vegetable of your choice, just ensure the vegetables have a crunchy texture for best result
  • I stir fry the capsicum separately as my family does not like the raw smell of capsicum and add to the rice in the final stage
